¼ cup cider or wine vinegar

½ cup extra-virgin olive oil

¼ teaspoon salt

Instructions

Combine all ingredients in a jar with a tight fitting lid and shake until well blended.

Variations

Balsamic Vinaigrette: Use balsamic vinegar in place of cider or wine vinegar.

Herb Vinaigrette: Add 1 tablespoon fresh, chopped thyme, tarragon, or rosemary to the dressing.

Lemon Vinaigrette: Add the juice of 1-2 lemons.

Honey-Mustard Vinaigrette: Add 1-2 minced garlic cloves, 1 teaspoon Dijon mustard, and 1 teaspoon honey.

I tried this immediately after I read it. I really like it for the taste and simplicity. If I want the lemon alternative, am I substituting the cider vinegar I used for the lemon or am I simply adding the lemon to the cider vinegar and olive oil?

Hi Mike, try adding the lemon in addition to the vinegar, as long as you like the flavor!

Thank you Hannah for responding. I have spent so much money on salad dressings over the years and this is certainly economical and tasty ! I will try adding the lemon juice to see if I like it. If not, the basic recipe given is FANTASTIC as is !
